  • 4 medium Zucchini
  • 2 Eggs
  • 1/4 cup Parmesan Cheese (grated)
  • 1 lb. Ground Turkey
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese (shredded)
  • 1 Bell Pepper (chopped)
  • 1 Yellow Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 Tablespoon Olive Oil

Instructions

  1. Preheat oven to 400°F.
  2. Grate zucchini and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini, eggs, Parmesan cheese, black pepper, onion powder, and half the Italian seasoning. Press into a greased baking pan.
  4. Bake for about 20 minutes until set and golden.
  5. In a skillet, heat olive oil over medium heat; sauté onion and bell pepper until soft. Add garlic and cook for another minute.
  6. Stir in ground turkey and cook until no longer pink; then mix in marinara sauce and remaining Italian seasoning.
  7. Spread the sauce mixture over the baked crust, top with mozzarella cheese, and sprinkle with remaining seasoning.
  8. Bake for an additional 20 minutes until cheese is melted and bubbly.
