  • 2 pounds zucchini (about 4 medium)
  • 1 teaspoon salt (for draining zucchini)
  • 1 large egg
  • 1 large red onion (thinly sliced)
  • 2 cloves garlic (grated)
  • 1 teaspoon dried oregano
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons extra virgin olive oil (more as needed)

Instructions

  1. Grate zucchini and mix with 1 teaspoon salt in a colander. Let sit for 10 minutes to drain excess water.
  2. Squeeze the grated zucchini dry using your hands or a clean towel.
  3. In a mixing bowl, beat the egg and combine it with the drained zucchini, red onion, garlic, oregano, flour, baking powder, salt, and pepper until mixed.
  4. Heat olive oil in a skillet over medium-high heat. Drop spoonfuls of batter into the skillet and flatten gently. Cook for about 3-4 minutes per side until golden brown.
  5. Transfer cooked fritters to paper towels to absorb excess oil and serve immediately.
