  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1/2 Red Bell Pepper, diced
  • 1 Brown Onion, diced
  • 2 Turkey Slices, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper, to taste
  • 2 tablespoon Olive Oil

Instructions

  1. Preheat your oven to 180C (350F) and line a square baking dish with baking paper.
  2. Grate zucchini and carrot into a colander, sprinkle with salt, and let them sit for about 10 minutes to draw out moisture.
  3. Heat olive oil in a frying pan over medium heat; cook onion and turkey until golden brown. Allow to cool slightly.
  4. Squeeze excess moisture from zucchini and carrot. In a mixing bowl, combine drained vegetables with bell pepper, cooled onion mixture, turkey, cheese, flour, eggs, milk, remaining olive oil, salt, and pepper. Mix until well combined.
  5. Pour mixture into the prepared baking dish, smooth the top, sprinkle with remaining cheese, and bake for 35-40 minutes until firm.
