  • 1 lb fresh spinach (chopped and cooked)

  • 1 cup marinara sauce
  • Vegan mozzarella cheese

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis lengthwise into thin strips and drizzle with olive oil; season lightly with salt.
  3. In a mixing bowl, combine vegan ricotta, cooked spinach, chopped basil, Italian seasoning, and salt. Stir until well mixed.
  4. Take a zucchini slice, place a spoonful of filling at one end, and roll tightly.
