  • 2 sticks of butter (226 g, room temperature)
  • 1 1/4 cups sugar (280 g)
  • 2 teaspoons vanilla extract
  • 1 cup milk (room temperature)
  • 1/2 cup sour cream (125 g, room temperature)

Instructions

  1. Preheat oven to 350°F (177°C). Grease and flour three 6-inch cake tins and line with parchment paper.
  2. In a medium bowl, whisk together cake flour, salt, baking powder, and baking soda; set aside.
  3. In a small bowl, mix milk, sour cream, and vanilla; set aside.
  4. Cream together butter and sugar in a stand or handheld mixer until smooth.
  5. Gradually add egg whites while mixing on low speed; increase speed until fully combined.
  6. Alternate adding dry ingredients and milk mixture until just combined—do not overmix.
  7. Divide batter evenly among prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for 15–20 minutes before transferring to a wire rack to cool completely.
