  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • Salt and black pepper, to taste
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Fresh parsley, chopped (optional)
  • Drizzle of honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Brush the cut sides of the butternut squash with olive oil. Drizzle with honey and sprinkle with cinnamon, salt, and black pepper.
  2. Place the squash cut side down on a baking sheet. Roast for 30-40 minutes, or until tender when pierced with a fork.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté diced onion until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Stir in shredded chicken and chicken broth. Cook for 2-3 minutes until heated through. Remove from heat and mix in grated Parmesan cheese. If using, add cranberries and walnuts. Season with salt and pepper to taste.
  5. Carefully scoop out some flesh from each roasted butternut squash half. Mix this scooped-out flesh into the chicken filling for extra flavor and texture.
  6. Spoon the chicken mixture back into each butternut squash half until filled generously.
  7. Return stuffed squash to the oven. Bake for an additional 15 minutes until filling is golden brown and heated through.
