  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt

  • 2 cups cooked rice
  • 1 ½ cups corn (fresh, frozen, or canned)
  • 1 tbsp butter
  • ¼ cup cotija cheese, crumbled
  • ¼ cup cilantro, chopped
  • 1 avocado, sliced (optional)
  • ¼ cup sour cream
  • 2 tbsp mayo
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)

Instructions

  1. In a bowl, mix olive oil, chili powder, smoked paprika, garlic powder, onion powder, salt, and lime juice. Coat the chicken thoroughly with this mixture. Marinate for at least 15–30 minutes to enhance flavor.
  2. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 5–7 minutes per side, or until its internal temperature reaches 165°F (75°C). Let it rest before slicing into strips.
  3. In the same pan used for chicken, melt butter over medium heat. Add corn and cook until slightly charred—about 3–5 minutes. Season with a pinch of salt and additional chili powder if desired.
  4. In a small bowl, combine sour cream, mayo, lime juice, garlic powder, and cayenne pepper if using. Stir until smooth and set aside.
  5. Start with a base of cooked rice in each serving bowl. Add sliced chicken on top followed by charred corn. Drizzle generously with creamy sauce before finishing with cotija cheese and chopped cilantro. If you like avocado, add slices on top for extra creaminess!
