  • 450g flank or sirloin steak
  • 1 tbsp olive oil
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 tbsp butter
  • 2 garlic cloves, finely chopped
  • 2 cups broth or water
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Pat the steak dry, rub with olive oil, and season with spices.
  2. Sear in a hot skillet for 4–5 minutes per side until desired doneness.
  3. Let the steak rest before slicing thinly against the grain.
  4. Cook rinsed rice in olive oil and broth for about 18–20 minutes.
  5. In the same skillet, melt butter and sauté garlic; add milk to simmer.
  6. Gradually stir in cheeses until melted; season to taste.
  7. Assemble by spooning rice onto plates, adding steak and queso sauce on top, and garnishing as desired.
