  • 10 tbsp butter
  • 1 1/2 cups dark chocolate chips or chunks
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs, at room temperature
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • Candy eyes for decoration
  • 20 oz semi-sweet or milk chocolate chips for coating
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • Heavy cream for thinning icing

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9 x 9 inch pan with parchment paper.
  2. In a microwave-safe bowl, melt the butter and dark chocolate chips together until smooth.
  3. Stir in the sugars until fully dissolved.
  4. Beat the eggs in a stand mixer until frothy, then gradually mix in the chocolate mixture along with the espresso powder (if using) and vanilla extract.
  5. Add flour, cocoa powder, baking powder, and salt; mix until just combined. Fold in remaining chocolate chips.
  6. Spread batter into the prepared pan and bake for 25–30 minutes. Cool completely before cutting.
  7. For coating, melt additional chocolate chips with coconut oil. Dip each brownie and let cool on parchment paper.
  8. Mix powdered sugar with heavy cream until thick, then use to decorate brownies as mummy bandages and add candy eyes.
