  • 1 lamb shoulder (bone-in, approx. 45 lbs)
  • 6 cloves garlic, minced
  • 3 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. In a bowl, mix garlic, both mustards, honey, apple cider vinegar, olive oil, rosemary, and thyme until combined.
  4. Place the lamb in a roasting pan and brush half of the glaze over it.
  5. Cover with foil and roast for about 3 hours. Remove foil during the last hour and baste every 20 minutes with remaining glaze.
  6. Check for an internal temperature of at least 145°F (63°C). Let rest for 15 minutes before carving.
