  • 200 g firm tofu
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu with chipotle chili powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until browned.
  2. Preheat your oven to 375°F (190°C).
  3. Spread tortilla chips on a baking sheet and top with cooked tofu, cheese, black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes until the cheese is melted.
  5. Garnish with chopped cilantro before serving warm with sour cream and guacamole.
