  • 1/4 cup olive oil
  • 2 tbsp butter
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley
  • 1 lemon, zested
  • 1 large head of broccoli, cut into florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 200°F (95°C) to keep cooked chicken warm.
  2. Prepare three shallow dishes: one with flour (seasoned with salt and pepper), one with beaten eggs, and another with a mixture of Parmesan cheese, Italian seasoning, garlic powder, paprika, cayenne pepper (optional), salt, and pepper.
  3. Dredge chicken pieces first in the flour mixture, then dip into eggs, and finally coat in the Parmesan mixture.
  4. Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken in batches for about 5-7 minutes until golden brown; transfer to a baking sheet in the oven to keep warm.
  5. In a medium saucepan, heat olive oil over medium heat; add minced garlic until fragrant. Stir in rinsed rice; pour in chicken broth and bring to a boil. Cover and simmer for 18-20 minutes until tender.
  6. Meanwhile, steam or sauté broccoli with olive oil and garlic until tender-crisp; finish with a splash of chicken broth and sprinkle of Parmesan cheese.
  7. Serve garlic rice on plates topped with savory chicken bites and broccoli.
