  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut rum for at least one hour. Drain and pat dry.
  2. Set up three bowls: one with flour, one with whisked eggs and coconut milk, and the last with coconut flakes.
  3. Coat each pineapple ring first in flour, then dip into the egg mixture, and finally press into the coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coated pineapple rings for about one minute per side until golden brown.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and reserved rum until smooth.
