  • 2/3 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons olive oil

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid.
  2. In a large bowl, combine drained zucchini, shredded carrots, garlic, flour, eggs, scallions, salt, and pepper. Mix until well combined.
