  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing or lining it with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Pour in melted butter and mix until crumbly.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared dish for the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the crust and spread evenly. Top with remaining crumble mixture and sprinkle walnuts if desired.
  6. Bake for 30–35 minutes until golden brown on top and filling is set. Let cool completely before slicing.
