4 ounces cream cheese, softened
1/2 cup canned pumpkin puree
1 (14-ounce) can sweetened condensed milk
1 1/2 teaspoons pumpkin pie spice
1/2 cup graham cracker crumbs
1/3 cup white chocolate chips
Granulated sugar, as needed, for rolling
Chocolate chips, for topping
Orange food coloring (or red and yellow food colorings), as needed, optional
Instructions
In a skillet over medium heat, melt the butter and mix in cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir until thickened.
Add graham cracker crumbs and white chocolate chips; stir until melted and smooth. Optional: add orange food coloring.
Pour the mixture onto a greased baking sheet; spread evenly and refrigerate until firm (about 2 hours).
Once chilled, roll into small balls using buttered hands.
Roll each truffle in granulated sugar to coat evenly.
