  • ¼ teaspoon fine salt
  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, mix rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, whisk together pumpkin puree, milk, eggs, maple syrup, melted butter or coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Transfer the batter to the prepared baking dish and sprinkle with toasted pecans if desired.
  6. Bake for 30-34 minutes until set; a toothpick should come out clean.
  7. Allow to cool for 5 minutes before cutting into squares and serving.
