  • 1 white fish fillet (tilapia, cod, or sole)
  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil or butter
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed potatoes in olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until crispy.
  2. Season the fish fillet with salt, pepper, garlic powder, and paprika. Heat a skillet over medium-high heat with olive oil. Sear the fish for about 3-4 minutes on each side until cooked through.
  3. In a mixing bowl, mash the avocado and mix in chopped tomato and onion. Add lime juice and salt to taste.
  4. Plate the seared fish alongside the roasted potatoes and add a generous scoop of guacamole.
