  • 2 roasted red peppers (finely diced)
  • ⅓ cup finely diced shallot
  • 2 garlic cloves (minced)
  • ½ cup extra-virgin olive oil
  • 1 lemon (zested and juiced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • Ground black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine the white beans with chopped herbs, diced roasted red peppers, shallot, minced garlic, olive oil, lemon juice and zest, kosher salt, red pepper flakes, and ground black pepper.
  2. Stir until all ingredients are well combined.
  3. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours; overnight is recommended for richer flavor.
  4. Before serving or storing leftovers in an airtight container in the fridge.
