  • 4 cups shredded zucchini
  • 2 large eggs
  • ¼ cup shredded Parmesan cheese
  • ½ cup shredded mozzarella cheese (plus more for topping)
  • 32 ounces meaty spaghetti sauce
  • 4 ounces turkey pepperoni
  • Green peppers
  • Onions
  • Mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded zucchini, eggs, Parmesan cheese, mozzarella cheese, salt, minced garlic, and Italian seasoning. Mix well.
  3. Spread half of the zucchini mixture in a greased baking dish. Layer with half of the spaghetti sauce and half of the remaining mozzarella cheese. Repeat layers with the remaining zucchini mixture, sauce, turkey pepperoni, green peppers, onions, mushrooms, and leftover mozzarella cheese.
  4. Bake for about 40 minutes until bubbly and golden brown on top. Allow to cool slightly before slicing.
