  4. Stir in lemon zest and juice.
  5. Combine wet and dry ingredients until just mixed; fold in zucchini.
  6. Pour batter into prepared pans and bake for 35 minutes or until a toothpick comes out clean.
  7. Cool in pans for 10 minutes before transferring to wire racks.
