Ingredients

Scale
  • 4 pounds apples (about 9 medium-sized), peeled and cored
  • 1 cup apple cider
  • ¾ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon kosher salt
  • Juice of half a lemon (about 1 tablespoon)

Instructions

  1. Cook the apples: In a large pot, combine the apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until apples are very soft.
  2. Puree the mixture: Use a hand blender to puree until smooth. Alternatively, transfer in batches to a regular blender.
  3. Thicken the puree: Return the puree to the pot and cook uncovered while stirring occasionally until thickened (approximately another hour).
  4. Add lemon juice: Stir in lemon juice. Pour your homemade apple butter into jars and refrigerate.
