  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream (or plain Greek yogurt)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add flour and mix until crumbly.
  3. Press the mixture into the bottom of the prepared pan to form the crust layer.
  4. Bake for 15 minutes; remove from oven and set aside to cool slightly.
  5. Meanwhile, mix diced peaches with sugar, lemon juice, and cornstarch in another bowl.
  6. Spread the peach mixture over the pre-baked crust.
  7. In another bowl, whisk together eggs, sugar, sour cream (or yogurt), flour, and vanilla extract until smooth.
  8. Pour this topping over the peach layer in the pan.
  9. Bake for an additional 35–40 minutes or until golden brown on top.
  10. Allow cooling completely before cutting into squares.
