  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 2 large carrots (diced)
  • 2 celery stalks (diced)
  • 1½ cups dried green or brown lentils (rinsed)
  • 3 medium potatoes (diced)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 8 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and black pepper (to taste)
  • 2 cups fresh spinach or kale (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in diced carrots and celery; sauté for about five minutes.
  3. Add rinsed lentils, diced potatoes, diced tomatoes with juices, vegetable broth, cumin, smoked paprika, thyme, rosemary, salt, and pepper. Mix well.
  4. Bring to a boil, then reduce heat to low and simmer covered for 40 minutes until lentils are tender.
  5. If desired, stir in spinach or kale until wilted. Adjust seasoning as needed before serving.
  6. Ladle into bowls and garnish with fresh parsley.
