  • 1/2 teaspoon baking soda

  • 2 teaspoons vanilla essence

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to the wet mixture; stir gently until just combined.
  5. Fill muffin cups two-thirds full with batter.
  6. Bake for about 18 minutes or until a toothpick comes out clean.
