  • 1/2 cup panko bread crumbs
  • 1/2 cup plain bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 garlic clove
  • 1/2 tsp salt (divided)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, combine the egg with 1/4 tsp salt and pressed garlic; mix well.
  3. Slice the zucchini into uniform fry-shaped strips.
  4. In another bowl, mix the panko bread crumbs, plain bread crumbs, grated Parmesan, and remaining salt.
  5. Dip each zucchini strip into the egg mixture first, then coat with the breading mixture.
  6. Spray the air fryer basket with cooking spray and arrange the coated zucchini fries in a single layer. Lightly spray the tops with more cooking spray.
  7. Cook for about 8 minutes or until golden brown and crispy.
