  • 1 red bell pepper
  • 1 orange bell pepper
  • 1/2 red onion
  • 1 cup pineapple chunks
  • 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
  • 1 tbsp avocado oil
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, season chicken with salt and drizzle with avocado oil.
  3. Add diced bell peppers, red onion, and BBQ sauce; mix until thoroughly coated.
  4. Spread the mixture evenly on the prepared baking sheet and bake for 20 minutes.
  5. Add pineapple chunks and return to the oven for an additional 10-20 minutes until chicken reaches an internal temperature of 165°F.
  6. Remove from oven, squeeze lime juice on top, garnish with cilantro and sesame seeds, and serve hot over cauliflower rice or white rice.
