  • 2 medium zucchini, sliced (about 2 pounds)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 ounce) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchini into 1/2" rounds, salt them lightly, and let sit in a colander for 15 minutes. Rinse and pat dry.
  3. In a large skillet over medium-high heat, heat olive oil. Sauté the onions until soft, then add garlic and ground beef. Cook until browned.
  4. Stir in diced tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  5. In an 8×8 baking dish, layer half of the beef mixture, followed by half of the zucchini slices and half of the mozzarella cheese. Repeat layers.
  6. Bake for 20 to 25 minutes until the cheese is melted and slightly golden.
  7. Let rest for 10 minutes before serving.
