  • Salt & pepper to taste
  • 1 tbsp lemon juice
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk
  • 2 cups fresh lettuce leaves, chopped
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar

Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, dried herbs, smoked paprika, salt, pepper, and lemon juice in a bowl. Rub onto both sides of the chicken breasts and let marinate for at least 15 minutes.
  2. Boil cubed potatoes in salted water until fork-tender (about 12–15 minutes). Drain and return to the pot.
  3. Grill the marinated chicken on medium-high heat for about 5–6 minutes per side until cooked through (internal temperature of 165°F/74°C).
  4. Prepare the salad by combining chopped lettuce and tomatoes in a bowl; drizzle with olive oil and lemon juice (or balsamic vinegar), seasoning with salt and pepper.
