  • 2 boneless, skinless chicken breasts
  • 12 oz rigatoni pasta
  • 4 tbsp butter
  • 5 cloves garlic
  • 2 cups baby spinach
  • 1½ cups heavy cream
  • 1¼ cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp olive oil
  • ¼ cup reserved pasta water, as needed
  • Chopped fresh parsley, for garnish

Instructions

  1. Boil salted water in a large pot and cook rigatoni until al dente. Reserve ¼ cup pasta water before draining.
  2. Season chicken with salt, pepper, garlic powder, and onion powder. In a skillet, heat olive oil and 2 tbsp butter over medium-high heat. Cook chicken until golden brown, about 6-7 minutes. Set aside.
  3. In the same skillet, lower heat and add remaining butter and minced garlic. Sauté until fragrant, then add spinach until wilted.
  4. Pour in heavy cream and stir in cream cheese until smooth. Add Parmesan and mozzarella cheese, stirring until thickened; adjust with reserved pasta water as needed.
  5. Mix cooked pasta and chicken into the sauce until well-coated. Garnish with parsley before serving hot.
