Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cloves garlic
  • 1 medium yellow onion
  • 1 head of broccoli
  • 5 oz fresh spinach
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through (about 6-8 minutes). Season with salt, pepper, and Italian seasoning.
  2. Remove chicken from the skillet and set aside. Add butter to the same skillet, then sauté minced garlic and chopped onion until softened (3-4 minutes).
  3. Add broccoli florets and cook until bright green (about 5 minutes). Stir in fresh spinach and cook until wilted (2-3 minutes).
  4. Pour in chicken broth and heavy cream; bring to a simmer while stirring. Mix in Parmesan cheese until melted.
  5. Return the chicken to the skillet and combine everything well. Optionally add red pepper flakes for heat.
  6. Serve hot over rice, pasta, or cauliflower rice.
