  • 1 cup crumbled feta cheese
  • ½ cup strained Greek yogurt

  • ½ cup grated Gruyere cheese

  • 1 tablespoon olive oil (plus extra for drizzling)

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Wash and dry the zucchinis. Cut them in half lengthwise and scoop out some flesh to create space for the filling.
  3. In a mixing bowl, combine feta cheese, Greek yogurt, chopped spring onion, grated Gruyere cheese, lemon zest, garlic powder, parsley, olive oil, and oregano. Mix well.
  4. Generously fill each hollowed zucchini half with the mixture and drizzle with olive oil.
