  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 7 large bell peppers
  • 1 cup shredded cheddar jack cheese

Instructions

  1. Preheat oven to 375°F (190°C). Prepare bell peppers by cutting the tops off and removing seeds.
  2. In a large pan, heat olive oil over medium heat. Sauté diced onion until soft; add minced garlic and cook for an additional minute.
  3. Add ground beef, cooking until browned (about 5–6 minutes). Drain excess fat if necessary.
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper. Cook until slightly thickened (4–5 minutes).
  5. Fill each bell pepper with the beef mixture and place in a baking dish. Bake for about 10–12 minutes until peppers are tender.
  6. Remove from oven, sprinkle cheese on top of each pepper, and return to bake until cheese is melted (5–7 minutes). Garnish with parsley before serving.
