  • 1/2 cup dill pickle juice
  • 1 cup diced cheddar cheese
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons finely chopped white onion
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha (or hot sauce)
  • Salt and pepper to taste

Instructions

  1. Cook the elbow pasta according to package instructions until al dente; drain and rinse under cold water.
  2. In a mixing bowl, combine the drained pasta with half of the dill pickle juice and let sit for 5 minutes.
  3. In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, pepper, and chopped dill until smooth.
  4. Combine the pasta with diced cheese, sliced pickles, chopped dill, and onion in a large bowl. Toss with dressing until evenly coated.
  5. Refrigerate for at least 4 hours before serving for the best flavor.
