  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • Juice and zest of 1 lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. Make the Dressing: In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, salt, and pepper. Mix well and set aside.
  2. Cook the Shrimp: Boil water in a pot over medium-high heat. Add shrimp and cook for 2-3 minutes until pink. Transfer cooked shrimp to an ice water bath to cool.
  3. Combine Ingredients: Chop cooled shrimp into bite-sized pieces. In a bowl, mix chopped shrimp, diced cucumber, sliced green onions, and dressing until well coated.
