  • 2 pounds ground beef (or ground chicken or turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire-roasted tomatoes
  • 8 oz tomato paste
  • 4 oz diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 6 oz cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 2 bay leaves
  • Salt to taste
  • 23 cups chicken or beef broth
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Chop onions and poblano peppers.
  2. Brown ground beef in a skillet over medium heat; drain excess fat.
  3. In the crockpot, combine cooked beef with onions, poblanos, spices, tomatoes, tomato paste, hot sauce, butter, and bay leaves.
  4. Pour in broth to reach desired consistency.
  5. Cover and cook on low for about 120 minutes.
  6. Stir in cream cheese and cheddar just before serving.
  7. Serve hot with toppings of choice.
