  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup diced sweet onion (e.g., Vidalia)
  • Pinch of red pepper flakes
  • 1 ½ tablespoons minced garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 12 tablespoons chopped fresh herbs (basil, oregano, mint)
  • 1 cup heavy cream
  • ¾ cup freshly grated Romano cheese

Instructions

  1. Cook the pasta according to package directions; reserve one cup of pasta water.
  2. Shred zucchini after cutting it in half lengthwise and removing seeds.
  3. Heat olive oil in a large skillet over medium-high; sauté onion for three minutes.
  4. Add red pepper flakes and garlic; cook for one minute.
  5. Stir in shredded zucchini with salt, pepper, and half of each herb; cover and cook on medium-low for 15 minutes.
  6. Uncover, stir in heavy cream and remaining herbs; heat through.
  7. Mix in Romano cheese, adjusting consistency with reserved pasta water as needed.
