Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and brown the sausage until cooked through; set aside.
  3. Sauté onion in the same skillet for about 5 minutes; add garlic and cook for an additional minute.
  4. Blend roasted red peppers with heavy cream until smooth; pour into the skillet with onions and garlic.
  5. Stir in Italian seasoning and red pepper flakes; let simmer for about 5 minutes.
  6. Add cooked sausage and Parmesan cheese to the sauce; season with salt and pepper.
  7. Toss rigatoni with the sauce until well coated; adjust consistency with reserved pasta water if needed.
  8. Serve topped with extra Parmesan and fresh basil.
