  • 1 lb sirloin or flank steak (cut into bite-sized cubes)
  • 8 oz pasta shells
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta shells in a pot of salted boiling water until al dente, then drain and set aside.
  2. Season steak cubes with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear the steak until browned, about 3-4 minutes per side. Remove from pan.
  3. In the same skillet, reduce heat to medium, melt butter, and sauté minced garlic until fragrant. Return the steak to the skillet.
  4. Wipe out any burnt bits, then melt more butter, add garlic, chicken broth and heavy cream; whisk until smooth and simmer for 3-4 minutes.
  5. Stir in Parmesan cheese until melted, add drained pasta shells and toss to coat. Fold in steak bites gently.
  6. Serve hot, garnished with chopped parsley.
