  • 1 yellow bell pepper

  • 1 tbsp olive oil
  • 1 medium red onion
  • 2 cloves garlic
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Romano cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp chopped sun-dried tomatoes

Instructions

  1. Cook the linguine according to package instructions until al dente, reserving ½ cup of pasta water before draining.
  2. Season chicken with Cajun seasoning and sauté in olive oil over medium heat until cooked through; set aside.
  3. In the same skillet, sauté sliced bell peppers and onion until softened. Add minced garlic and cook for an additional minute.
  4. Pour in chicken broth and let it simmer briefly.
  5. In another pan, melt butter and add minced garlic, then stir in heavy cream and cheeses until smooth.
  6. Combine the cooked linguine with the sauce; adjust consistency with reserved pasta water if necessary.
