  • 2 boneless, skinless chicken breasts
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 8 oz penne pasta
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package directions in salted boiling water. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté bite-sized chicken pieces until browned and cooked through (6–7 minutes). Transfer to a plate.
  3. Lower heat; melt butter in the same skillet. Add minced garlic and sauté for about one minute.
  4. Stir in Cajun seasoning, smoked paprika, salt, and pepper. Pour in heavy cream and chicken broth; simmer for 4–5 minutes until thickened.
  5. Add Parmesan cheese; stir until melted. Return chicken and pasta to the skillet; toss until evenly coated.
  6. Serve hot, garnished with fresh parsley.
