  • lbs boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 1½ cups heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and garlic powder, then sear for 5–6 minutes until browned. Add butter and minced garlic; toss to coat.
  3. In a separate skillet, melt butter for the Alfredo sauce, then stir in cream cheese until smooth. Gradually add heavy cream and whisk until combined with Parmesan and mozzarella cheeses. Adjust consistency with reserved pasta water if needed.
  4. Combine cooked fettuccine with the Alfredo sauce and top with Cajun chicken bites.
  5. Garnish with chopped parsley and extra Parmesan before serving.
