  • 3/4 pound extra lean ground beef
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 (15-ounce) can chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1/2 teaspoon salt

Instructions

  1. In a large saucepan over medium heat, cook the ground beef with minced garlic and chopped onion until the beef is browned (approximately 10 minutes). Drain excess liquid if needed.
  2. Stir in the chopped stewed tomatoes, beef broth, chili powder, ground cumin, oregano, and cayenne pepper.
  3. Reduce heat to low and cover; let simmer for one hour while stirring occasionally.
  4. Add in rinsed pinto beans and salt; cook for an additional 15 minutes.
  5. Serve hot in bowls.
