  • 2 Vegan Gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 140g softened butter (for cocoa Breton shortbread)
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • 3 egg yolks

Instructions

  1. Prepare Coconut Mousse: Whip cold heavy cream and mascarpone, gradually adding powdered sugar until soft peaks form. Chill. Soak gelatin sheets in cold water for 5 minutes. Heat coconut milk, dissolve gelatin in it, cool slightly, then fold into whipped cream.
  2. Mold the Mousse: Pour mousse into hemisphere molds halfway, add chocolate spread, and cover with more mousse. Freeze for at least 6 hours.
  3. Make Cocoa Breton Shortbreads: Mix shortbread ingredients into dough, chill for 30 minutes. Preheat oven to 180°C (350°F), roll out dough, cut into circles, and bake for about 10 minutes.
  4. Assemble Dessert: Unmold mousse domes onto shortbread bases, let thaw at room temperature for 2 hours, and sprinkle grated coconut on top before serving.
