  • 56 firm apples (Golden Delicious or Braeburn)
  • 100g unsalted butter
  • 120g granulated sugar
  • 1 tsp vanilla extract (optional)
  • 1 pinch salt
  • 1 sheet puff pastry

  2. Peel, core, and quarter the apples.
  3. In an ovenproof skillet, melt butter over medium heat, add sugar, and cook until golden caramel forms. Stir in vanilla and salt.
  4. Arrange apple quarters cut-side up in the caramel and cook on low for 10-15 minutes.
  5. Cover with puff pastry, tucking edges into the pan.
  6. Bake for 30-35 minutes until golden brown.
  7. Let cool briefly before inverting onto a plate.
