  • 2 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F. Grease a 9-by-5-inch loaf pan with nonstick spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined; add shredded zucchini and mix in 3/4 cup chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
