Chicken Tzatziki Bowls are a delightful Mediterranean-inspired dish that brings together juicy marinated chicken, creamy tzatziki sauce, and a colorful array of fresh vegetables and grains.

  • 1 pound boneless, skinless chicken breast or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. In a bowl, mix olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper. Add chicken and marinate for at least 15 minutes.
  2. Cook the chicken in a skillet over medium heat for 6-7 minutes per side until golden brown; let rest before slicing.
  3. For the tzatziki sauce, combine Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper in a bowl.
  4. Assemble bowls with rice and top with sliced chicken and prepared vegetables. Drizzle tzatziki sauce over the top.
