  • 1 pound boneless, skinless chicken breasts, sliced

  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water
  • Fresh garlic
  • Fresh ginger

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture; set aside.
  3. In a large skillet or wok over medium-high heat, heat vegetable oil. Add sliced chicken and cook for about 5-7 minutes until golden brown.
  4. Add bell peppers, broccoli, and carrots; stir-fry for another 3-4 minutes until veggies are tender-crisp.
  5. Add cooked noodles and pour in teriyaki sauce; toss everything together for an additional 2-3 minutes until heated through.
  6. Serve hot garnished with green onions.
