  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 2 boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 oz. cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • Fresh thyme and oregano for seasoning
  • 1/3 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. In a medium saucepan, combine marsala apple vinegar and chicken broth. Bring to a boil, then reduce heat and simmer until reduced to about 1 cup (approximately 15 minutes).
  2. Season chicken breasts with salt and pepper, then dredge in flour.
  3. Heat a skillet over medium-high heat with butter and olive oil. Add the seasoned chicken and sear until cooked through (165°F), about 10-12 minutes total.
  4. Remove chicken from the skillet and keep warm.
  5. In the same skillet, sauté sliced mushrooms until golden brown (about 8 minutes), adding minced garlic in the last minute.
  6. Pour in the reduced marsala mixture along with thyme and oregano; bring to a simmer.
  7. Stir in cornstarch mixture until thickened, then add heavy cream and season to taste.
  8. Return chicken to the skillet; spoon sauce over it before serving.
