  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Cut chicken breasts into thin cutlets and marinate with olive oil, garlic, Italian seasoning, salt, and pepper for at least 15 minutes.
  3. Sauté spinach in remaining olive oil until wilted; set aside.
